負責各類中式冷盤、涼菜的製作與備料,包含食材的洗滌、切配、烹煮(如燙、滷)、調味與醃製等。 精準掌握冷盤的擺盤藝術與技巧,確保出品美觀、精緻,並嚴格控制菜餚的風味、口感與品質,符合酒店出品標準。 嚴格遵守食品安全及衛生規範,確保冷盤工作區域、工具與設備的清潔與消毒,防止交叉污染。協助控制食材成本,減少浪費。 熟悉並執行酒店中餐冷盤菜單,依據標準食譜進行製作,並協助新菜品的研發與測試。 協助冷台區域的日常清潔維護,確保所有設備和工具的衛生。與廚房內其他同事緊密合作,配合主管協調各部門的食材需求,確保順暢的出餐流程。 續學習與記錄新的烹調技巧與食譜,提升自己在冷盤製作領域的專業能力。 Cold Dish Preparation & Plating Responsible for the preparation and mise en place of various Chinese cold dishes and appetizers, including washing, cutting, cooking (e.g., blanching, braising), seasoning, and marination of ingredients. Masterfully executes the art and techniques of cold dish plating, ensuring beautiful and exquisite presentation. Strictly controls the flavor, texture, and quality of dishes, adhering to hotel presentation standards.
Cost & Hygiene Management Strictly adheres to food safety and hygiene regulations, ensuring cleanliness and sanitization of the cold dish workstation, tools, and equipment to prevent cross-contamination. Assists in controlling food costs and minimizing waste.
Menu Execution & Standard Adherence Familiarizes self with and executes the hotel’s Chinese cold dish menu. Prepares dishes according to standard recipes, and assists in the research and development as well as testing of new cold dishes.
Kitchen Cleanliness & Collaboration Assists with the daily cleaning and maintenance of the cold station area, ensuring the hygiene of all equipment and tools. Works closely with other kitchen colleagues, coordinating with supervisors to manage ingredient flow for various sections to ensure smooth service.
Professional Development Continuously learns and records new cooking techniques and recipes to enhance professional skills in the cold dish culinary field.
Accountability This position reports to the Chinese Banquet Sous Chef. The Cold Dish Chef is responsible for executing daily operations of the cold dish section, ensuring the quality, presentation, and hygiene of cold dishes, and assisting in cost control. This role is crucial in delivering high quality and visually appealing Chinese cold dishes and maintaining efficient kitchen operations.
